Crave ’s partner restaurant Babu Ji proves that Indian food can be so much more than pappadams, curry and rice…

Jessi Singh and his wife Jennifer opened Babu Ji in NYC and it’s been the Indian restaurant on everybody’s lips ever since. He’s originally from Chandigarh in Northern India and honed his playful culinary style in Australia, where he has a string of popular restaurants. The regularly changing menu he’s created for New York spans across Indian street food, regional curries and tandoori specialties – all of it being a harmonious riot of colour and flavor.

Traditional dishes are balanced with innovative concepts. For example, there’s an Unauthentic Butter Chicken on the menu as well as an Indo-Chinese style cauliflower. The Original Naan Pizza is perfect flavour mayhem with its combination of sweet-pickled chilli butter and fontina cheese. On the tasting menu there’s a Melbourne Quinoa Salad made up of squash, pomegranate and curry leaves, and a coriander-and-cardamon-rich Short Rib Korma.

Bollywood movies are beamed onto the walls and there are framed pictures of well-dressed Indian men and women throughout. It’s a stylish and gregarious venue. A help-yourself beer fridge sits in the corner for diners to peruse the shelves of various beers: lager, sour pale ales, stout and even hefeweizen.

The wine list is adventurous but not overly challenging, while the cocktail list is as excited as the food menu. Beetroot, Aperol and mezcal are teamed for the vibrant Don’t Tell Auntie, and the Sardani Ji is a perky little number made with gin, elderflower, black pepper, zesty lime, cucumber and celery bitters.

These cocktails are available during brunch, too. This is when you can order things like a Chaat Egg Scramble Roll which comes with masala fries, a Paneer Veggie Omelet and possibly the most exciting dish (ever): the Masala Fried Chicken and Technicolor Waffles.
